Chips

Zuccini chips! 2 cups of shredded zuccini, 2 eggs, 2 cups of cheese! Spread into 6 flat rounds on a greased baking sheet.  Bake at 425 for 12 min on one side, flip and cook for 5 min. Let rest on rack for 6 to hrs! Enjoy!

Weird pancakes

So, I tried to make pancakes with the almond meal. I used the pancake recipe for pancakes out of the joy of cooking. Turned out tasting like French toast. It never really seemed to cook all the way, and I added guar gum to thicken the batter...ill try a lot less liquid next time. Not bad though, just not what I was expecting

So back in November, after complaining to my OB/GYN about having severe pain in my lower abdomen, she finally scheduled me for an ultrasound. The ultrasound determined that I have ovarian cysts. About 2 weeks later, I ended up in the ER with horrible pain, the worst pain I've ever felt. The assumption was that I had a cyst rupture, which then gave me an infection. The only thing the doctor said to help control the cyst was to go on birth control. Birth control has terrible side effects, but obviously trying to deal with those sounded better than ending up in the ER again. So here we are in June now, 7 months later, and the side effects of the birth control are terrible and getting worse. Overall I have just felt terrible, so exhausted, I know my moods have been all over the place, depression, allergies, the list goes on and on..so my sweet husband did some research and found that it looks like I have Candida. It's so frustrating though because I've complained about all these symptoms to my Dr., and she NEVER told me about this. After tons of research on Candida, you basically go on a low-carb, sugar free, yeast free diet. So I will be sharing some of the things I am finding on this, because I would guess that many women suffer from this, yet due to the typical American diet, are just making it worse. There are many healthy options out there, and even if you don't have Candida, the effects that carbs and sugar have on all of our bodies is something we should all look at!
